Jamón Iberico

December was a month to eat like I had never eaten before... And one of the food-related highlights of the month was the purchase of this huge, delicious leg of cured ham. It is ham that, instead of being cooked, has been cured and seasoned and left to sit in a warehouse to accumulate flavor. Spaniards typically buy it at Christmas to eat at breakfast and as appetizers for the next couple of months, and I have learned to love this tradition. My new favorite breakfast has become: sliced ham (it's placed on one of those holders and sliced super thinly) on a toasted bar of bread with garlic- infused olive oil. Gimme that and a cup of coffee and I'm set for the morning! It has such a delicious and strong flavor that you only need a little bit to satisfy, so one leg lasts a long time. Thank goodness for that, because just one of these beastly legs can cost up to 200 euro!
